Zucchini Relish - cooking recipe
Ingredients

10 c. ground zucchini
4 c. ground onions
5 Tbsp. salt
2 1/4 c. white vinegar
4 1/2 c. sugar
1 Tbsp. nutmeg
1 Tbsp. dry mustard
1 Tbsp. turmeric
1 Tbsp. cornstarch
1/2 tsp. pepper
2 tsp. celery salt
1 green pepper, finely chopped
1 red sweet pepper, finely chopped
Preparation

Put first three ingredients in a large bowl and mix well.
Let stand overnight.
Drain and mix in cold water.
Drain again and put into large pot with remaining ingredients, stirring occasionally.
Cook 30 minutes or until desired consistency.
Pour into 6 to 8 hot sterilized pint jars and seal.
Process 5 minutes in boiling water bath.
