Potato Pancakes - cooking recipe

Ingredients
    3 baking potatoes
    2 Tbsp. matzoh meal
    1 Tbsp. vegetable oil
    2 eggs
    1/2 medium onion, grated
    salt and pepper
Preparation
    Wash, peel and grate potatoes on coarse blade of 4 sided grater (you can grate with skins on and may like it better).
    In a medium bowl, lightly beat the eggs and add all else.
    Grease a large nonstick skillet with oil and heat over medium-high heat.
    Spoon heaping tablespoon of the mixture onto the skillet and flatten with a spatula.
    Cook until golden brown on one side about 2 to 3 minutes, then turn over and do the same on the other side.
    Drain on paper toweling and serve quickly with apple sauce.
    Makes 12 to 16 pancakes.
