Homemade Sausage - cooking recipe

Ingredients
    5 lb. ground beef or venison
    2 tsp. smoke salt
    2 1/2 tsp. mustard seed
    2 1/2 tsp. coarse ground pepper
    5 Tbsp. Tender Quick salt
    2 1/2 tsp. garlic salt
    2 tsp. hot pepper
    1 tsp. liquid smoke (optional)
Preparation
    Mix all ingredients together; place in refrigerator overnight. For next three days, take from refrigerator and remix; refrigerate again.
    On the fourth day, mix and shape into rolls, about 2 1/2-inches round.
    Place in broiler rack with pan underneath.
    Bake at 175\u00b0 for 8 hours.
