Quick Summer Salad - cooking recipe
Ingredients

4 to 5 large cucumbers, peeled and diced into 1-inch cubes
4 to 5 large, very ripe tomatoes, diced into 1-inch cubes (try to retain as much juice as possible)
1 large yellow onion, diced 1-inch (Vidalias are especially good)
2 to 4 garlic cloves (depending on your preference)
2 Tbsp. olive oil
4 Tbsp. red wine vinegar
1 tsp. oregano (if you use fresh, add more)
1 tsp. basil (if you use fresh, add more)
Preparation

In large glass bowl, rub one crushed garlic clove around bowl and leave in the bottom.
Add all the vegetables and mix them together.
Press in remaining garlic to taste and mix.
Add olive oil, vinegar, oregano and basil and blend into vegetables.
Top with Feta cheese and chill at least 1 hour.
This salad becomes an excellent marinated salad if you leave it in the fridge 3 to 5 days and periodically add additional vinegar.
