Ingredients

2 lb. beets
1/2 c. sugar
1/2 c. lemon juice or vinegar
1/2 tsp. salt
1 Tbsp. cornstarch
1/2 c. water
Preparation

Prepare and cook beets.
Mix cornstarch, sugar, water and lemon juice or vinegar and salt together; cook 5 minutes.
Peel and slice beets; pour mix over beets.
Allow to stand a few minutes before serving.
