Red Beans And Rice With Sausage - cooking recipe
Ingredients

1 lb. of dry kidney beans
3 large ham hocks
2-1/2 c. finely chopped celery
2 c. finely chopped bell pepper
2 tsp. white pepper
1-1/2 tsp. garlic powder
1 tsp. cayenne pepper
2 Tbsp. Tabasco sauce
Rice
Water to cover the beans, 16 cups of water total
2 c. finely chopped onions
5 bay leaves
2 tsp. dried thyme leaves
1-1/2 tsp. dried oregano leaves
1/2 tsp. black pepper
1 lb. smoked sausage, sliced
Preparation

Cover the beans with water, about 2 inches over the beans and let stand overnight.
When ready to use, drain and reserve the liquid.
