Red Salsa - cooking recipe

Ingredients
    3 large ripe tomatoes, peeled, seeded and finely chopped
    1/2 c. finely chopped red onion
    1/4 c. chopped scallion
    1/4 c. chopped fresh cilantro
    2 tsp. minced serrano chile
    2 cloves garlic, peeled and chopped
    1 Tbsp. fresh lime juice
    1 Tbsp. olive oil
    salt to taste
Preparation
    Combine all ingredients in a nonreactive bowl and allow to marinate for at least 2 hours before serving.
    Taste and adjust seasonings with salt and additional lime juice.
    Makes 2 1/2 cups.
