Potato Donuts - cooking recipe

Ingredients
    1 c. mashed potato
    1 c. sugar
    1 pkg. yeast in 1 c. lukewarm water
    2 eggs, well beaten
    1/2 c. margarine
    3/4 c. warm milk
Preparation
    Let first 3 ingredients rise for about 1 hour.
    After mixing, add the remaining ingredients.
    Add enough flour to stiffen dough and keep from sticking to hands, approximately 5 to 6 cups.
    Let rise until dough doubles in size, for about 1 hour.
    Roll and cut 1/2-inch thick.
    Fry in hot fat.
    Yields about 2 dozen.
