Andy Jackson'S Watermelon Pickles - cooking recipe

Ingredients
    1 medium watermelon
    1 qt. vinegar
    1 lb. sugar
    1 stick cinnamon
    0.5 tsp. cloves
    0.5 tsp. mace
Preparation
    Peel rinds of watermelon.
    Trim off every trace of green outer skin and pink fruit.
    Cut white rind into small 2 to 3-inch pieces.
    Place cut rinds in bottom of a large earthen dish. Sprinkle lightly and evenly with salt.
    Let stand overnight.
