Kidney Bean Casserole - cooking recipe

Ingredients
    1/2 c. chopped onion
    1/4 c. chopped green pepper
    1/4 c. chopped celery
    2 large cloves garlic, minced
    1 (15 oz.) can kidney beans, drained and rinsed
    1 c. peeled and chopped tomato
    1/4 c. water
    1/2 tsp. chili powder
    1/4 tsp. black pepper
    3 dashes hot sauce
    2 c. hot cooked rice
    1/4 c. sharp Cheddar cheese
Preparation
    Coat a large skillet with cooking spray. Cook over medium heat the onion, pepper, celery and garlic. Saute until tender. Stir in beans, tomato, water, chili powder, pepper and hot sauce. Cover and cook 8 to 10 minutes.
    Place rice in 1-quart casserole and pour bean mixture on top. Sprinkle with cheese and put back in oven until cheese melts.
