Diet Sweet And Sour Chicken - cooking recipe

Ingredients
    1 Tbsp. vegetable oil
    1 lb. chicken breasts, cut into thin pieces
    1 clove garlic, chopped
    3 stalks celery, sliced
    1/2 sweet pepper, chopped (red is good)
    1 can bean sprouts
    1 (8 oz.) can unsweetened pineapple tidbits
    2 Tbsp. vinegar
    1 tsp. minced ginger
Preparation
    Heat in hot skillet or wok the oil until hot.
    Add chicken and stir-fry a few minutes.
    Add garlic, celery, sweet pepper and bean sprouts; toss to coat.
    Drain pineapple (save juice).
    Toss pineapple with chicken-vegetables until mixed.
    In a bowl, mix pineapple juice, vinegar, ginger, salt and pepper to taste.
    Mix all ingredients.
    Serve with rice, if desired.
    Serves 4.
