Minestrone Soup - cooking recipe

Ingredients
    1/2 small onion, chopped
    1 small potato, cubed
    1 small carrot, sliced
    1 Tbsp. oil or fat
    2 c. water
    1/2 tsp. oregano
    1/2 tsp. basil
    1/8 tsp. garlic powder
    1/2 tsp. salt
    pinch of pepper
    1 c. peas
    1 c. drained kidney beans
    1 c. canned tomatoes
    2 oz. spaghetti, broken into 2-inch pieces
Preparation
    Saute onion, potato and carrot in oil or fat in a large saucepan until onion is golden brown and tender.
    Add water, oregano, basil, garlic powder, salt and pepper.
    Boil gently for 15 minutes.
    Add remaining ingredients and boil for 12 minutes longer, until spaghetti is tender.
    Serve sprinkled with grated Parmesan cheese, if desired.
    Makes four servings, about 1 cup each.
