Baked Summer Squash - cooking recipe

Ingredients
    1 1/4 lb. summer squash
    1 small onion, minced
    3 Tbsp. butter or margarine, melted
    1 egg
    1/4 c. milk
    1/2 tsp. salt
    1/8 tsp. black pepper
    1/4 c. minced parsley
    6 saltine crackers, crushed (1/4 c.)
Preparation
    Wash
    and trim squash.
    Shred with shredder to measure 4 cups. In
    a skillet saute onion and squash in 2 tablespoons of the butter, stirring frequently for 10 minutes, or until squash is tender.
    Beat
    lightly
    eggs,
    milk, salt and black pepper. Mix with
    squash,
    onion
    and
    parsley.
    Spread
    into
    greased shallow 1
    1/2
    quart
    baking
    dish.
    Mix
    cracker
    crumbs and remaining butter.
    Sprinkle over mixture.
    Bake at 450\u00b0 for 15 minutes or until well browned.
