Chicken Genoa - cooking recipe

Ingredients
    4 chicken breasts, skinned and boned
    1/2 c. Parmesan cheese
    1 c. fine cracker crumbs
    2 eggs, well beaten
    1 c. oil
    1 lb. fresh mushrooms
    1/2 lb. Jack cheese
    1/2 c. white wine
Preparation
    Dip chicken breasts in Parmesan cheese, egg and cracker crumbs. Brown in 1/2 cup oil in skillet.
    Arrange in baking dish in single layer.
    Arrange 1 slice of 1/4-inch jack cheese on each breast. Adding oil to skillet if necessary, saute sliced fresh mushrooms until tender.
    Add wine and saute slowly for 5 minutes.
    Spoon mushrooms over chicken (not too much liquid).
    Cover and bake at 350\u00b0 for 45 minutes.
