Shrimp Chowder - cooking recipe
Ingredients

1 c. potatoes, diced
1 c. celery, chopped
1/2 c. green pepper, chopped
1/2 c. leeks, chopped
1/2 c. carrots, chopped
1 c. clam juice
1 c. chicken broth
2 Tbsp. tomato paste
1/2 tsp. basil
1/4 tsp. thyme
1/4 tsp. pepper
1 1/2 c. low-fat yogurt (plain)
2 Tbsp. flour
1 lb. shrimp, cleaned
Preparation

Combine potatoes, celery, green pepper, leeks, carrots, clam juice and broth in large pan. Bring to boiling. Cover and simmer until vegetables are tender, about 15 minutes. Place half of vegetable liquid mixture in bowl of blender. Cover and process until pureed. Blend in tomato paste and seasonings. Combine yogurt and flour. Stir a small amount of pureed mixture into yogurt. Combine yogurt mixture with remaining vegetable mixture. Stir in remaining mixture and shrimp. Heat through, but do not boil. Serve with oyster crackers.
