Hopping John - cooking recipe

Ingredients
    1 lb. dried blackeye peas, cooked
    8 slices bacon, cooked crisp and crumbled
    1 large onion and 2 ribs celery, chopped fine and browned in bacon grease
    2 cans RoTel tomatoes, chopped
    2/3 c. rice, cooked, with salt and pepper to taste
Preparation
    Add chopped RoTel tomatoes with juice to the onion and celery.
    Add bacon and rice.
    Mix all with peas.
    Pour into 4 qt. casserole dish.
    Bake at 350 degrees for about 30 minutes.
    Makes 10 to 12 servings.
