Sausage Royale - cooking recipe

Ingredients
    1/2 lb. smoked sausage, cut into 1/2-inch thick rounds
    1 small onion, chopped
    1 small bell pepper, chopped
    1 rib celery, chopped
    1 c. raw rice
    1 tsp. salt
    2 c. water
Preparation
    Fry sausage rounds, over low heat until slightly browned. Drain sausage on paper towel.
    Pour off fat except 3 tablespoons. Saute onion, celery and bell pepper in same pan until wilted, not brown.
    Add 2 cups water and 1 teaspoon salt.
    Bring to boil and cook 2 minutes.
    Remove from heat; add sausage and raw rice.
    Pour all into a greased casserole with tight fitting lid.
    Cover and bake 45 minutes at 350\u00b0.
