Red Snapper Mexicana - cooking recipe
Ingredients

1 1/2 lb. snapper or sturgeon
1/2 to 1 c. flour
salt and pepper to taste
3 to 4 Tbsp. butter
6 oz. (1 c.) salsa
12 oz. Monterey Jack cheese, grated
6 oz. Cheddar cheese, grated
chopped green chilies
chopped onion and parsley
Preparation

Preheat oven to 350\u00b0.
Dip fillets in flour, salt and pepper.
Melt butter in skillet and lightly brown fish on both sides, adding more butter as necessary.
Place fish in individual casserole dishes. Top each with salsa, cheeses, chilies, onion and parsley.
Bake about 10 minutes or until done.
