Southern Pecan Log - cooking recipe

Ingredients
    2 c. white sugar
    1 c. light brown sugar
    1 c. light cream
    1/4 c. corn syrup
    2 Tbsp. margarine
    3/4 c. confectioners sugar
    1 c. finely chopped pecans
Preparation
    In medium-heavy saucepan, combine white sugar, brown sugar, cream and syrup; mix well.
    Cook, but do not stir, to 240\u00b0 on candy thermometer or until small amount dropped in cold water forms a firm ball.
    Remove from heat.
    Add butter but do not stir. Cool to 150\u00b0.
    Beat with electric mixer until very thick and light colored.
    Stir in 1/2 cup confectioners sugar. Knead in additional sugar until mixture is very stiff.
    Divide and roll into four 1 1/2 x 6-inch logs.
    Brush with corn syrup.
    Roll in nuts.
    Wrap in wax paper.
    Chill; slice.
    Store in refrigerator.
