Smothered Fried Chicken - cooking recipe

Ingredients
    1 frying chicken, cut into 8 pieces
    3 c. milk
    1/4 tsp. liquid red pepper seasoning
    1 c. all-purpose flour
    1 Tbsp. black pepper
    1 tsp. salt
    1 c. vegetable oil
Preparation
    Place chicken, milk and red pepper seasoning in bowl. Refrigerate, covered, for 2 hours.
    Combine flour, pepper and salt in a shallow plate.
    Drain chicken.
    Discard any remaining milk mixture.
    Coat chicken with flour.
    Working in batches, brown chicken in hot oil in large skillet over medium-high heat.
    Return all chicken to skillet.
    Lower heat to medium-low and cook covered for 20 minutes, turning once.
    Increase heat to medium-high, uncover and cook 5 minutes to crisp skin.
    Drain chicken on brown paper bags.
