Squash Appetizer - cooking recipe

Ingredients
    3 medium squash
    17 1/2 oz. pork sausage or ground beef
    1 onion, chopped
    1 green pepper, chopped
    salt and pepper to taste
    1/2 bunch coriander or parsley
Preparation
    Peel and chop squash.
    Cook without adding water over low heat with onion, green pepper and coriander (or parsley).
    Add cut sausage (or ground beef), stir well.
    Season with salt and pepper and cook over low heat 15 minutes.
    Serve hot on \"tortillas.\"
