Steeplechase Brunch - cooking recipe

Ingredients
    8 slices white bread, crust removed (I use Pepperidge Farm)
    2 to 3 Tbsp. butter, softened
    1/3 c. butter or margarine
    1/3 lb. fresh mushrooms, sliced
    1 1/3 c. thinly sliced yellow onions
    salt and pepper to taste
    1 lb. mild bulk sausage
    1/2 lb. Cheddar cheese, grated
    4 eggs
    1 3/4 tsp. dry mustard
    3/4 tsp. ground nutmeg
    2 Tbsp. finely chopped fresh parsley
    3/4 tsp. salt
    1/8 tsp. pepper
Preparation
    Butter 1 side of the bread with softened butter and set aside. Melt 1/3 cup butter and brown mushrooms and onions over medium heat for 5 to 8 minutes or until tender.
    Season to taste with salt and pepper; drain and set aside.
