Microwave Coconut Mochi - cooking recipe

Ingredients
    1 box mochiko
    2 c. sugar
    1 can coconut milk
    2 c. water
    1 tsp. vanilla extract
    5 to 6 drops red food coloring
    1 pkg. potato starch
    Pam
Preparation
    Mix together mochiko, sugar, coconut milk, water, vanilla extract and red food coloring with an electric mixer until all lumps dissolve.
    Lightly grease microwavable Bundt pan with Pam and pour mixture into pan.
    Cover with Saran Wrap.
    Microwave on Medium-high heat for 15 minutes and 5 minutes on High (adjust accordingly with your microwave).
    Cool for approximately 1 hour. Cut with plastic knife and roll in potato starch.
    Store in airtight container (Tupperware).
