Eggplant Au Gratin - cooking recipe

Ingredients
    4 small eggplants
    2 large onions
    12 crackers, crushed and buttered
    4 Tbsp. butter or what's needed
    1 lb. sharp cheese
    2 eggs
    salt and pepper
Preparation
    Peel eggplants.
    Boil in salted water until tender.
    Strain off water and mash.
    Saute chopped onions in butter.
    Beat eggs. Grate cheese.
    Combine ingredients.
    Salt and pepper to taste. Cover with buttered crumbs.
    Bake in moderate oven 45 minutes. Serves 8 to 10.
