Lemon Pineapple Pie - cooking recipe

1 c. reduced-fat graham cracker crumbs (about 16 squares)
1/4 c. margarine, melted
1 (8 oz.) pkg. sugar-free cook and serve vanilla pudding mix
2 c. water, divided
1 (3 oz.) pkg. sugar-free lemon gelatin
1 (8 1/4 oz.) can unsweetened crushed pineapple, well drained
1 (8 oz.) carton light frozen whipped topping, thawed
sliced lemon and strawberries and fresh mint (optional)
Preparation

Combine graham cracker crumbs and margarine; press onto the bottom and sides of a 9-inch pie plate. Bake at 350\u00b0 for 8 to 10 minutes or until set and lightly browned;
cool on a wire rack.
