Stuffed Fillet Of Sole - cooking recipe

Ingredients
    2 1/2 c. chopped onion
    1 Tbsp. margarine
    1/4 c. chopped parsley
    3/4 c. chopped peeled cucumber
    2 hard-boiled eggs, chopped
    2 c. cooked rice
    2 tsp. salt
    1/2 tsp. pepper
    3 Tbsp. milk
    4 to 5 lb. fresh sole fillets
Preparation
    In skillet, saute onion in margarine.
    Stir in the parsley, cucumber, hard-boiled eggs, cooked rice, salt and pepper.
    Add milk to moisten.
    Spoon this filling on fillets.
    Roll to enclose filling and secure with toothpicks.
    Place in baking dish. Drizzle butter over top.
    Bake 45 minutes in 400\u00b0 oven.
