Southern Fried Green Tomatoes - cooking recipe

Ingredients
    2/3 c. cornmeal
    1/4 tsp. salt
    1/4 tsp. pepper
    3 large green tomatoes, sliced
    1 egg, beaten
    1/4 c. plus 2 Tbsp. oil, divided
Preparation
    Combine cornmeal,
    salt and pepper in a small bowl; stir well. Dip tomato slices in beaten egg; dredge in cornmeal mixture, coating well on both sides.
    Heat 2 tablespoons oil in large skillet over medium-high heat until hot.
    Add one layer of tomato slices and fry 3 to 5 minutes or until browned, turning once. Remove slices from skillet.
    Drain; set aside and keep warm. Repeat procedure.
    Serve immediately.
    Serves 6.
