Salami - cooking recipe
Ingredients

5 lb. hamburger or 2 1/2 lb. hamburger and 2 1/2 lb. ground deer meat
5 tsp. hickory smoke salt
2 1/2 tsp. mustard seed
1/2 tsp. garlic powder
2 1/2 tsp. black pepper
2 Tbsp. whole peppercorns
1 Tbsp. Worcestershire sauce
2 1/2 tsp. Morton Tender Quick salt (can substitute)
Preparation

Mix all ingredients together thoroughly.
Refrigerate for 24 hours (during this time, be sure to re-mix at least 5 times).
Make into 3 rolls.
Cook on rack in oven at 50\u00b0 for 8 hours.
