Boiled Custard - cooking recipe

Ingredients
    1 gal. milk
    16 eggs
    1 tsp. salt
    2 1/2 c. sugar
    1 Tbsp. cornstarch
Preparation
    Separate 6 eggs and save whites to use on top.
    Place milk over heat in double boiler or in kettle over pan of water.
    Heat until lukewarm.
    Take out 1 pint milk to which you add eggs, sugar, salt and cornstarch, which have been mixed well.
    Strain the mixture as you pour back into the remaining milk over heat. Cook until the mixture begins to thicken and a few bubbles begin to form around side of kettle.
    Never boil.
    Remove from heat. Flavor with nutmeg, lemon or vanilla to taste.
    Beat and add 12 tablespoons sugar to egg whites.
    Beat until stiff.
    Fold in on top of custard while still warm.
