Orange-Pecan Stuffed Acorn Squash - cooking recipe
Ingredients

2 acorn squash
1 Tbsp. brown sugar
1 Tbsp. butter or margarine
1/4 tsp. salt
1/4 tsp. grated orange peel
orange juice
2 Tbsp. chopped pecans
Preparation

Halve squash; remove seeds.
Place cut side down on greased baking sheet.
Bake in 350\u00b0 oven for 30 to 35 minutes or until squash is tender.
Scoop out pulp, leaving shell.
Stir together pulp, sugar, butter, salt and orange peel.
Add enough orange juice (about 2 teaspoons) to make a fluffy consistency.
Refill shells; sprinkle with pecans.
Bake 10 minutes.
Makes 4 servings.
