Chicken Breasts Diane - cooking recipe
Ingredients

4 large chicken breasts, halved
1/2 tsp. salt
1/2 tsp. black pepper
2 Tbsp. salad oil
2 Tbsp. margarine
3 Tbsp. chopped green onions
juice of 1/2 lemon
3 Tbsp. chopped parsley
2 tsp. Dijon-style mustard
1/4 c. chicken broth
Preparation

Slightly pound chicken breasts between sheets of waxed paper. Sprinkle with salt and pepper.
In a micro-safe dish, melt margarine and mix with oil.
Place chicken breasts in dish and coat on both sides.
Microwave at High power for 3 minutes.
Let rest for 1 minute.
Turn breasts over.
Microwave again at High power for 3 minutes, until chicken is done, but not overcooked.
Set aside.
