Rhubarb Sauce - cooking recipe

Ingredients
    1 3/4 lb. rhubarb (6 c.), sliced in 1/2-inch pieces
    3/4 c. sugar
Preparation
    Combine rhubarb with sugar in a heavy saucepan.
    Cover and cook over low heat for 10 minutes.
    Remove cover; raise heat and cook, while stirring, until liquid evaporates and rhubarb has an applesauce consistency (about 10 minutes).
    Remove from heat and cool.
    Store, covered, in refrigerator until ready to serve. Makes 2 cups.
