Crystallized Pickles - cooking recipe

Ingredients
    7 lb. green tomatoes or cucumbers
    2 gal. water
    3 c. lime
    1/2 lb. powdered alum
    small box ginger
    3 pt. vinegar
    5 lb. sugar
Preparation
    Soak pickles for 24 hours, rinse well and soak for 12 hours in clear water.
    Rinse well and soak 24 hours in 1/2 pound of powdered alum and 2 gallons water.
    Rinse well and soak in 2 gallons water with one small box of ginger for 6 hours.
    Remove and add 3 pints of vinegar and 5 pounds of sugar; put in pickles and soak 3 hours. Put pickle spices to taste in cloth; simmer 1 hour.
    Makes about 12 pints.
