Winter Vegetable Soup - cooking recipe
Ingredients

4 Tbsp. vegetable oil
1 large onion, chopped
1 glove garlic, crushed
1/2 c. whole wheat flour
5 c. water or canned beef broth
2 c. shredded cabbage
4 carrots, peeled and sliced
1 can stewed tomatoes
1/2 tsp. salt
1/4 tsp. pepper
small can kidney beans, drained
1 Tbsp. chopped parsley
Preparation

Heat oil in large pot.
Add onion and garlic and cook until soft but not browned.
Add flour and cook, stirring constantly, 1 to 2 minutes.
Remove from heat; add broth slowly, stirring well, and return to heat.
Add all the vegetables and other ingredients and simmer until vegetables are tender.
Serve with croutons or browned slices of French bread topped with grated cheese.
