Fettuccine And Goat Cheese - cooking recipe
Ingredients

1/2 lb. fettuccine
1/4 c. olive oil
1 Tbsp. minced garlic
2 Tbsp. minced fresh parsley leaves (plus, if desired, parsley leaves for garnish)
2 Tbsp. minced fresh mint leaves
1 to 1 1/2 c. cherry tomatoes, quartered
3 oz. mild goat cheese as Montrachet, crumbled (about 3/4 c.)
Preparation

Cook fettucine al dente.
Meanwhile, heat oil and garlic over moderately low heat just until mixture is hot.
Drain fettucine well and toss with oil mixture, parsley, mint, tomatoes and goat cheese.
Salt and pepper to taste.
Garnish with parsley sprigs.
