Flavory Fritters - cooking recipe

Ingredients
    3 eggs
    1/2 c. all-purpose unsifted flour
    1 Tbsp. vegetable oil (for frying)
    3/4 c. milk
    1 1/2 tsp. baking powder
    1 tsp. salt
    1 1/2 c. cooked corn (kernels)
Preparation
    In a bowl beat eggs with milk, flour, baking powder, salt and 1 tablespoon of oil.
    When smooth, fold in corn.
    Pour enough oil into a large skillet to make it 1-inch deep and heat to 160\u00b0.
    Drop in corn mixture by the heaping tablespoonful.
    Fry 2 or 3 minutes until brown on one side.
    Turn over and cook other side for 2 or 3 minutes until brown.
    Drain on absorbent paper and keep warm in low oven while finishing the rest of the frying.
    Serve warm with sauteed pieces of Canadian bacon.
