Cucumber Relish - cooking recipe

Ingredients
    4 c. ground, unpeeled cucumbers
    1 c. green pepper
    3 c. ground onion
    1/4 c. salt
    2 c. white vinegar
    1 Tbsp. mustard seed
    1/2 c. sweet red pepper
    3 c. finely diced celery
    3 1/2 c. sugar
    1 Tbsp. celery seed
Preparation
    Use coarse blade of grinder.
    Combine all vegetables in large bowl; sprinkle with salt and cover with water.
    Let stand 4 hours. Drain thoroughly in a colander; press out all excess liquids.
    In pan, combine sugar, vinegar, celery seed and mustard seed.
    Bring to a boil, stirring until sugar is dissolved.
    Stir in drained vegetables.
    Simmer 10 minutes.
    Pack in pint jars and seal. Process in boiling water bath until vegetables are done, approximately 45 minutes to 1 hour.
    Yields 4 to 5 pints.
