Herbed Minestrone Milano - cooking recipe
Ingredients

15 oz. mild or hot ground turkey sausage
2 cups coarsely chopped cabbage
1 cup each diced onion, carrots, & celery
2 cups canned beef broth
2 cups canned tomatoes, cut up
1 large clove garlic, minced
1 1/2 tsp. basil
2 cups cooked vermicelli, which was broken into small pieces before cooking
1 cup frozen peas
1 cup fresh spinach, chopped
2 oz. zucchini, sliced
Preparation

In a large saucepan, brown sausage and cook cabbage, onion, carrot and celery with garlic and basil until tender.
Add broth, tomatoes and zucchini.
Bring to a boil, reduce heat and simmer 20 minutes or until done, stirring occasionally.
Add remaining ingredients, heat and stir occasionally.
Divide evenly.
Serves 8.
