Cinnamon-Orange Oat Muffins - cooking recipe

1 c. oats
1 c. oat bran
1 c. whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. grated orange rind
1 c. unsweetened applesauce
3/4 c. low-fat buttermilk
2 egg whites, lightly beaten
2 Tbsp. olive oil
Preparation

Preheat oven to 400\u00b0.
Use muffin liners. In one bowl, combine all dry ingredients.
In another bowl, combine all other ingredients.
Pour onto dry ingredients and mix until just combined.
Scoop by 1/4 cupfuls.
Bake 15 to 17 minutes or until toothpick comes out sticky, but not wet.
