Herbed Potatoes - cooking recipe
Ingredients

4 medium sized baking potatoes, cut in 1/4 inch slices
2 medium white onions, sliced thin
2 fresh tomatoes, sliced
1/2 tsp. salt
1 tsp. thyme
3/4 tsp. rosemary
1 Tbsp. olive oil or margarine
2 Tbsp. parsley
Preparation

Coat large baking dish with cooking spray or butter the dish. Layer half each of potatoes, onions and tomatoes in dish. Sprinkle with half each salt, thyme and rosemary.
Repeat layers and drizzle with olive oil or dot with margarine.
Cover and bake 35 minutes at 425\u00b0.
Sprinkle with parsley and serve.
