Miniature White Fruit Cakes - cooking recipe

Ingredients
    1 c. vegetable shortening
    5 eggs
    1 tsp. salt
    1/4 c. pineapple juice
    1/2 c. finely chopped citron, orange and lemon peel or 2 c. prepared fruit
    1/2 c. chopped figs
    1/2 c. dried apricots
    1 1/4 c. candied pineapple
    1 c. golden raisins
    2 c. chopped nuts (blanched almonds or pecans)
Preparation
    Cream shortening and sugar.
    Add eggs, 1 at a time, beating well after each addition.
    Sift 1 1/2 cups flour, salt and baking powder; add alternately with pineapple juice to first mixture. Dust fruit with 1/2 cup flour.
    Add fruit, coconut and nuts to mixture.
    Mix only until well blended.
