Romaine, Red Onion And Orange Salad - cooking recipe

Ingredients
    1 very small red onion, sliced thin
    1/3 c. fresh orange juice (2 oranges)
    2 Tbsp. extra virgin olive oil
    2 tsp. Dijon mustard
    1 Tbsp. chopped fresh parsley
    1 small clove garlic, minced
    pinch of sugar
    salt and pepper
    1 head romaine or escarole or both mixed, wash, dried and torn (4 c.)
    2 navel oranges, peeled and sliced
Preparation
    Soak onion in ice water for 10 minutes. Drain.
    In a small bowl or jar, whisk orange juice, oil, mustard, parsley, garlic, sugar, salt and pepper.
    Put lettuce on platter.
    Arrange orange slices and then onion on top. Drizzle dressing over and toss. Serves 4.
