Potato And Leek Chowder - cooking recipe

Ingredients
    3 large leeks
    2 Tbsp. margarine
    5 medium potatoes, diced
    2 large carrots, sliced thin
    1 medium onion, chopped
    3 c. chicken broth
    1 c. milk (optional) *
    2 Tbsp. minced parsley
Preparation
    Melt butter; add leeks, potatoes, carrots and onion.
    Cook slowly until soft, stirring often.
    Add chicken broth; cover and bring to a boil.
    Reduce heat and simmer about 25 minutes.
