Gingerbread Muffins - cooking recipe
Ingredients

1/2 c. all-purpose flour
1/4 c. oatmeal or oat bran
1/4 c. white sugar
1/4 tsp. salt (optional)
1 tsp. cinnamon
1/4 tsp. allspice
3/4 c. low-fat buttermilk
1 egg and 1 egg white
1/2 c. whole wheat flour
1/4 c. brown sugar
1 tsp. baking soda
1 tsp. ginger
1/4 tsp. cloves
1/4 tsp. nutmeg
1/3 c. oil
1/4 c. molasses
Preparation

Preheat oven to 350\u00b0.
Spray muffin tins with Pam.
Combine flour, sugars, soda, salt and spices in a large bowl; set aside. Combine buttermilk, oil, egg, egg whites and molasses.
Add flour to buttermilk mixture; do not overmix.
Pour into 12 muffin tins. Bake for 15 minutes, or until done.
Serve warm or cold.
Can be heated lightly; warm in microwave oven.
Very good.
