Green Pepper Jelly - cooking recipe

Ingredients
    3 large green peppers, seeded
    2 Tbsp. dried chili pepper flakes or scant 2 Tbsp. crushed red pepper
    scant 1/2 tsp. chili powder
    6 1/2 c. sugar
    1 1/2 c. cider vinegar
    pinch of salt
    1 bottle fruit pectin (add a bit more)
Preparation
    Chop peppers finely in blender, using 1/2 cup cider vinegar to moisten.
    Put chopped peppers, rest of vinegar, salt, pepper flakes and chili powder in heavy saucepan with sugar.
    Bring to a boil, stirring constantly for about 30 seconds.
    Remove from heat. Add 1 bottle fruit pectin (I add a little more).
    Return to rolling boil; skim off foam.
    Stir constantly for 1 minute only. Pour into jars; cool and cover tightly.
    Makes about 5 small jars.
