Sugar-Free Pear Watermelon Sherbet - cooking recipe
Ingredients

1 1/2 tsp. unflavored gelatin
1 c. skim milk
1 c. evaporated milk
2 c. crushed pears (about 6 whole pears)
sweetener to equal 2 Tbsp. sugar
1 Tbsp. lemon juice
1/4 tsp. watermelon oil or extract
4 drops red food coloring
Preparation

Soften gelatin in 1/2 cup skim milk.
Bring remaining 1/2 cup skim milk to a boil.
Pour gelatin milk mixture into boiling milk; stir to dissolve gelatin.
Add evaporated skim milk.
Chill until syrupy.
In food processor, combine remaining ingredients and milk mixture.
Beat until mixture begins to thicken. Pour into 8 x 8-inch square pan.
Freeze until firm.
Remove from freezer 15 minutes before serving time.
Serves 6, 77 calories.
