Porketta - cooking recipe

Ingredients
    rolled pork loin
    lots of salt
    lots of coarse ground pepper
    paprika
    thyme
    lots of fresh minced garlic
    a little dry mustard
    lots of fennel seed (not powder)
Preparation
    Rub all spices in by hand; let set overnight in refrigerator to blend all together.
    (You can use a little bit of oil to help the spices to stick.)
    Cook to cooking instructions for cooking pork (325\u00b0 for 30 to 35 minutes for every pound of meat), or use a meat thermometer until it reaches 170\u00b0 or well done.
