Ingredients

1/2 c. butter
1 c. jam (any variety)
2 c. sifted flour
2/3 c. buttermilk
1 tsp. soda
1 tsp. cinnamon
1 tsp. nutmeg
1 c. brown sugar
3 eggs, separated
1/2 c. raisins
1 tsp. allspice
Preparation

Cream butter and gradually add sugar.
Cream until the mixture is fluffy.
Add egg yolks and jam to this mixture and beat until well blended.
Sift flour and measure.
Take out about 1/2 cup to use to dredge raisins.
Sift remaining flour with cinnamon, nutmeg and allspice.
Add soda to buttermilk.
Add flour mixture alternately with the buttermilk and soda.
Mix in flavored raisins, and lastly, fold in stiffly beaten egg whites.
Reserve 2 tablespoons for the filling.
Divide the remaining batter into two 9-inch cake pans which have been lightly greased in the bottom and wax paper lined.
Bake at 350\u00b0 for 35 minutes.
