Jalapeno Rice Casserole - cooking recipe
Ingredients

2 2/3 c. water
1/2 tsp. chicken bouillon
1 c. uncooked Minute rice
1/2 c. plain low-fat yogurt
2 Tbsp. reduced calorie creamy Italian salsa dressing
1 jalapeno pepper, seeded and chopped
1 Tbsp. chopped cilantro
1/3 c. shredded Monterey Jack cheese
vegetable cooking spray
Preparation

Combine water and bouillon in saucepan.
Bring to boil.
Stir in rice.
Cover.
Reduce heat and simmer 25 minutes or until liquid is absorbed.
Remove from heat.
Stir in yogurt, salad dressing, pepper and cilantro.
Spoon into 1-quart dish coated with spray. Bake uncovered at 350\u00b0 for 20 minutes.
Top with cheese.
Bake 5 minutes.
Makes 6 servings.
