Sinful Baked Fudge - cooking recipe

Ingredients
    1 lb. Baker's chocolate or other high quality chocolate
    3/4 lb. butter
    15 eggs, separated, at room temperature
    1 1/4 lb. sugar
Preparation
    Melt chocolate and butter in a bowl over hot water.
    Work half of the sugar into the egg yolks, stirring with a whisk until mixture lightens in color.
    Combine yolk mixture with chocolate mixture.
    Whip egg whites to soft peaks.
    Gradually add the remaining sugar to make a stiff meringue.
    Fold into chocolate batter carefully, preserving as much volume as possible.
    Chill to set, approximately 3 hours.
    Smooth one-half batter into a greased 9 x 12 baking dish.
    Bake for 30 minutes at 350 degrees.
    Cool (it will fall).
    When cool, smooth remaining batter into the same pan and freeze solid, 3 hours or overnight.
    Bake 20-30 minutes at 400 degrees until center is hot, but still liquid and fudge is cakey on top and bottom.
    Serve warm with a dollop of whipped cream.
